Low free fatty acid (FFA) is a sign of quality in olive oils. To qualify as an extra virgin olive oil, the International Olive Council states that the acidicty must be less than 0.8%. But this is quite easily achieveable, the highest quality oils aim for an acidity level below 0.2%.
